how does one celebrate Fat Tuesday?
with tacos and beer, of course!
Black Bean + Mushroom Tacos
ingredients:
- 1 pack of mushrooms
- 1 can of black beans
- 1 red pepper
- 1 jalapeno
- garlic
- 1/2 raw onion
- shredded cabbage
- tortillas
for guacamole:
- 2 avocados
- 1/2 lime
- spices
prepare the guacamole. cut avocados and scoop flesh out. squeeze the juice from one half lime onto avocados. season with spices (i use: himalayan sea salt, red chili flakes, cumin, cayenne pepper, lemon pepper). store in fridge until tacos are ready- and, also, so you don't eat it all (;
cook beans over low heat until done.
slice mushrooms, pepper, jalapeno, and garlic and place in pan. add 1/2 C water for cooking. season to your liking. cook veggies in water for at least ten minutes (do you like your veggies crisp or not?).
assemble tacos by first placing guacamole on taco shells. then layer ingredients and enjoy!

Oh those look so amazing.
YUM! D sautéed my mushroom in a bit of olive oil and lots of spices, and it was AMAZING. I will definitely do this as a veggie filling when D is feeling meat.
